This is one of my most regular standbys, and the speediest. You just heat up some smoked haddock in a frying pan/skillet with some water and aromatics, then get a couple of cans or a jar of beans, heat them up with a little oil, flake the fish through the beans and, finally, scatter over some parsley and, should you have some to hand, chives. As simple as this is, you could indeed simplify further, using just water alone to poach the smoked haddock, making sure you season well with pepper as you gently mix the dish together.

Some friends told me about a year ago that they’d gone to a Chinese restaurant and, instead of having duck in pancakes, they’d had soft, shredded lamb. I became obsessed. I thought about it constantly. I endlessly imagined what it had tasted like. I dreamt of it. Enough! I just I had to cook it. I did. And then I didn’t stop. I think by now I could stir up the 5-spice mixture and get this in the oven in my sleep. But then, it is very, very easy. Of course, I don’t make my own Chinese pancakes. For that matter, I’m told Chinese restaurants don’t either. Though please don’t feel confined to eating the lamb this way; it’s very good bundled into lettuce wraps, too. You may need to be rather brutal with the lettuce as you tear the leaves off to provide the edible wrappers for the lamb, so I suggest you need one to two icebergs. If you want to perk the leaves up a little, making sure they curve into appropriate respositories for later, leave them in a big bowlful of very cold water (throw in ice cubes too) for 20 minutes or so, then make sure you drain them well before piling them up on their plate.

Admittedly, making a meat sauce and then cooking pasta in it is very un-Italian, but it is dee-lish. Plus, it goes down a treat with children and teenagers and thus makes a great family supper. I love it served in shallow bowls and sprinkled with chopped fresh mint and parsley, and even some crumbled feta, but my children prefer it just as it is, which is how you see it: simple, unadorned, delicious! NOTE: as slow cooker brands vary with their settings the amount of water may vary for this recipe. If you are not sure then start by adding 300ml water, and then halfway through the pasta cooking time check and add more water from a freshly-boiled kettle if it looks too dry.

Nothing will ever take the place of my Ham in Coca-Cola from Bites — in my heart or on my table — but this slow-baked ham is a revelation of a different sort. The meat is astonishingly tender and carves into thin slices with ease; there is also very little shrinkage, and no wrangling with large joints of meat in boiling liquid. I always like a ham for the holidays — hot, it is spectacular, and it is helpful, after, to have cold ham to bring out alongside cold turkey (and for general sandwich duty), and this is the way to cook it to make your life easier. And if the 12–24 hours’ cooking doesn’t suit you, you can cook it for 5 hours in a 180°C/160°C Fan/gas mark 4/350ºF oven instead, before proceeding with the glaze. The juices that collect from the first step of cooking are gorgeously flavoured, but very intense. I pour a little of them over the cut slices of meat, but go sparingly. And please read the Additional Information section at the end of the recipe before proceeding.
