Spatchcocked Poussin With Baby Leaf Salad and Sourdough Croutons

Spatchcock Chicken with Miso and Sesame Seeds
Nigella Lawson
You can easily ask a butcher to spatchcock the chicken for you, but it isn’t difficult to do at home and can be curiously pleasurable. Just sit the chicken, breast-side down, on a board and press down a little until you hear a gratifying crunch. With a good pair of kitchen scissors or poultry shears, cut along each side of the backbone. Remove the backbone, then flip the chicken over and press down on the breast, to flatten it a little. The marinade infuses the chicken overnight with a deep and musky saltiness, but not spikily so; intense though miso most definitely is, it works subtly, bringing its caramelly saltiness to the meat.

Semi-Spanish Omelette

It is often decreed that the only ingredients (other than eggs of course) proper to a Spanish omelette are onions and potatoes, but I like a touch of red from some chopped peppers. I am sorry if this offends — and not only the Spanish — but you could speed this up by using some drained, canned new potatoes instead of cooking real ones. This is easy enough to make, but you do need to get it done in advance as the hottest you want to eat this is room temperature.

Much as I love to have a pan bubbling away on the stove, I often feel that the most stress free way to feed people is by taking the oven route. When I

I am (or certainly used to be) one of the few people I know who does not like canned tuna, and so I surprised myself by the fact that I love this instant pasta sauce made with the stuff. Maybe it

Spaghetti With Chard, Chilli and Anchovies
Nigella Lawson
This is the very first recipe in Cook, Eat, Repeat, and one I return to regularly. There is just something about the contrast between the semolina-sweet spaghetti, minerally chard, and the saline depth of the anchovies that I can never get enough of. I like to use Rainbow Chard, chiefly because I find myself immensely cheered the minute I get a beautiful bunch of it in the house. With its ridiculously bright-hued stems — red, bright pink, orange, yellow, all jumbled together — it looks more like the imaginative creation of a small child with a full set of crayons than something that exists in nature. But you can use any chard or, indeed, kale (cavolo nero/ Tuscan Kale is a favourite), broccoli or spinach in its place. I cook this often just for myself, even though it makes enough to feed two generously, as any leftovers are — trust me — wonderful cold, especially with a little more extra virgin olive oil and a good spritz of lemon juice. The very notion might make an Italian wince, but I dare say I have already caused eyebrows to raise in Italy by suggesting you grate over Parmesan or Pecorino when eating it first time out: the sacrosanct rules there forbid cheese with pasta dishes that contain either fish or a lot of garlic; this is divinely abundant in both. While there is no point pretending that the anchovies aren

Spaghetti alla Carbonara
Nigella Lawson
This is my favourite — along with all my other favourites. I love the buttery, eggy creaminess of the sauce, saltily-spiked with hot-cubed bacon: it’s comforting, but not in a sofa-bound kind of way. It feels like proper dinner, only it takes hardly any time to cook. This is my most regular dinner for two: I keep, at all times, the wherewithal to make it in the house.
