These delicate, scented cookies have fragrant flavour enough to be eaten alone, but are more than able to take a little light icing/frosting, too. Indeed, they would be pretty fabulous sandwiched, in pairs, with the buttercream of your choice. My preference is for the plain and simple version, nibbled with a cup of tea mid afternoon, or eaten with ice cream or after dinner coffee in the evening. I have used a heart-shaped cutter, measuring 6cm at its widest part, but you can, of course, use any cutter you want. I admit, it is unlikely you will want 60 cookies right off the bat, but the dough freezes well and so you can eke out your treats!

The food we eat connects us so deeply to those we love and, perhaps, especially so when they are no longer with us. And this recipe is really in honour of my maternal grandmother, and not just because her name was Rosemary. And yes, rosemary is, as Ophelia tells Hamlet, “for remembrance”, and has been since Egyptian times. Indeed, many Australians and New Zealanders wear a sprig of it to honour their fallen on Anzac Day. This is the cake I make when a friend is bereaved — and I know that many of you, ever since the recipe appeared in Feast, do likewise. It’s plain, undemanding, and offers sweet, scented comfort when grief makes eating difficult. And in its own simple way, it’s a beautiful cake, the rosemary sprig curving out over the top, down the length of the biscuity gold, dense loaf. I feel better just contemplating this. You get the comfort of a syrup pudding steamed for many, many hours in 30 minutes. And you do practically nothing to make it: roll out half a packet of good shop-bought pastry, ooze golden syrup over it, roll it up like a swiss roll and bung it in a dish, throwing over some milk before putting it in the oven. You can eat it with either cream or ice cream: whatever, it is perfect Sunday lunch pudding, though there is a good case for making it any day of the week.
