This is an adaptation of a dish served at Bar Kabawa by the chef Paul Carmichael in Manhattan’s East Village, where the vibe is casual and the food delicious. Mr. Carmichael, who is from Barbados, uses in-house ground goat meat for his geera goat patties and makes the dough from scratch with a honed technique.
