Honestly one of the greatest cakes ever. Have made it every year since 2020 when rhubarb and strawberry season rolls around. The crumble part of the recipe is my go to crumble recipe for any crumble. The coconut just adds that little bite of extra texture and flavour. Best thing in the book (so far).
