Anzac sandwich biscuits with dark chocolate filling
Helen Goh
Anzac biscuits are closely associated with Anzac Day on 25 April, which commemorates the members of the Australian and New Zealand Army Corps who served in the first world war. Made with oats, coconut and golden syrup, the biscuits are said to have been popular because they travelled well and kept for long periods, making them suitable for sending to forces overseas. My version here, a slightly less austere take on the classic, sandwiches two small biscuits with a lightly salted, olive oil-enriched dark chocolate ganache. The result is crisp at the edges, soft within and not too sweet

Apple and rhubarb crumb bars

The apple filling should be made in advance (up to two days), giving it plenty of time to cool before being spooned over the base. Serve these bars on their own with tea, or warm with a scoop of vanilla ice-cream for a sweet finish to a feast

Banana puddings with tahini butterscotch
Helen Goh
Light in texture (all the better to absorb the delicious butterscotch sauce) and with a hint of spice, I love to bake these puddings in individual moulds so each person gets their very own. But if you prefer a less fussy, family-style presentation, bake the pudding in a large, buttered ovenproof dish (about 30cm x 20cm x 6cm) – just lower the temperature to 165C fan/gas mark 4½ and bake for about 45 minutes, or until a skewer inserted into the middle comes out clean

Cheesecake with mulled wine cherry compote
Helen Goh
The crustless Basque cheesecake is given a festive twist here with a subtle orange flavour and a mulled wine cherry compote. The cherries are frozen, but bolstered by the more intensely flavoured dried variety and the mulled wine, it makes a delicious accompaniment to the creamy cheesecake. The cheesecake and the compote can both be prepared up to three days ahead and kept refrigerated

Individual gooseberry and almond pies
Helen Goh
Gooseberries require a little patience. Firm, pale and stubbornly sour, they don’t offer the easy sweetness of other berries, but give them something warm and soft to lean against, and watch them shine. Almond cream feels a natural companion: gently sweet and tender, cushioning the sharpness without dulling it. Baked in muffin tins, these small pies feel informal yet generous, plus all the components can be made up to three days ahead and assembled just before baking

Lemon pistachio snacking cake
Helen Goh
A good snacking cake earns its place not through grandeur, but reliability. It sits patiently on the counter, improves with a day’s rest and can be sliced into at odd hours: with coffee in the morning, tea in the afternoon or something stronger during a tense World Cup match. This lemon and pistachio version is especially companionable: tender, bright and just sharp enough to keep things lively

Pear, chocolate and hazelnut torte
Helen Goh
Unlike lighter, flour-based cakes, tortes are traditionally rich and dense. Often made with ground nuts instead of flour, this gives them a fudgy, moist texture. Here, ripe pears sink gently into a dark chocolate and hazelnut batter, with the flavours of vanilla, almond and cardamom subtly enhancing the depth of the chocolate and teasing out the fruit’s perfume

Pineapple pudding cake with salted tamarind caramel
Helen Goh
Tamarind concentrate comes in different forms, from thick and dense to thin and watery. For this cake, choose a Thai liquid tamarind concentrate – it is milder, sweeter and smoother in texture than the Indian style, which tends to be strongly tangy, earthy and chunkier, and more suitable for curries and chutneys

Pink grapefruit and yuzu drizzle cake
Helen Goh
A lovely cake to have on the kitchen counter, to slice and eat with a cup of tea on the days after Christmas when something simpler is called for. Yuzu juice adds a beautiful fragrance and complements the grapefruit so well. The fresh juice is difficult to come by, but the bottled variety is available in large supermarkets and online, and tastes just as good in this cake

Plum & Pistachio Bars
Helen Goh · Baking and the Meaning of Life
A traditional Bakewell tart consists of a pastry shell filled with jam and almond cream filling, finished with a layer of icing and a cherry on top. My version here replaces the jam layer with fresh plums for brightness and acidity. A little raising agent in the rich nutty filling lightens the crumb, while the layer of white icing has been replaced by a light dusting of icing sugar. Cut into bars, this is a hand-held, portable cake to take with you on a long drive, to a picnic or to pack into a lunchbox, but it’s equally good plated for dessert and served with cream.

Poached Chicken Congee
Yotam Ottolenghi, Helen Goh, Verena Lochmuller and Tara Wigley · Ottolenghi COMFORT
This is comfort food by so many measures. The soothing texture of the chicken and porridge; the chicken-soup-for-the-soul; bowl food eaten with a spoon or chopsticks. It’s the sort of food we eat when we are in need of something soothing and convivial, and is a dish that takes Helen straight back home. Kids love it too: you might just hold back on the sprinkle of peppercorns and chilli at the end. Getting ahead: The congee is best made fresh, but the chicken can be poached and shredded the day before. You’ll need to warm it up before serving, or stir it into the hot congee, rather than placing on top.

Thai mango and coconut sticky rice
Helen Goh
Known as khao niao mamuang, this sweet, creamy coconut rice with ripe mango is one of Thailand’s most beloved desserts. The rice used is sweet glutinous rice, which is sometimes labelled sticky rice – a short-grain variety that turns tender, glossy and slightly chewy when steamed. For the best results, soak the rice for at least six hours before steaming. Serve warm or at room temperature
